Brix Chocolate for Wine

We are so honored to announce BRIX Chocolate for Wine as our next event host. Foodiacs, this is one of the coolest and most innovative artisan foods we’ve ever found. We’re all familiar with the typical wine pairings with cheeses, fruits and savory dishes, but thanks to Brix we might have discovered the best one yet—chocolate. Brix’s exclusive offer to the Foodiacs community is their brand new Brix Collection featuring all four Brix Chocolate varieties with tasting notes and wine pairings for each, packaged in a beautiful gift box. This is the perfect gift for any wine or chocolate lover. Each of the Brix blends contains single origin Ghanaian chocolate to pair specifically with fruit-forward wines, enhancing their flavors. It’s so brilliant and so innovative we just can’t help thinking “why didn’t we think of it ourselves?”

The genius food artisan who founded Brix is Dr. Nick Proia, an Ohio pulmonologist. The good doctor loved wine and even gathered with his colleagues as part of a wine tasting group. As much as he enjoyed drinking wine and eating the obligatory cheese pairings his colleagues presented, he was frustrated that these high-fat and high-cholesterol cheeses were essentially erasing any potential health benefits he enjoyed from the wine. Determined to find an alternative, Dr. Proia began sampling every chocolate he could get his hands on and pairing them with his favorite wines. Many were too sweet, too creamy and just too candy-like. On the other end of the spectrum, the dark chocolates with a high cocoa content completely overpowered the wine. So began the quest for a perfect wine accompaniment.

Like many of the food artisans Foodiacs has profiled, Dr. Proia began his tireless mission, recipe after recipe, to create just the perfect blends with the right profiles to pair with specific wine styles. After much trial-and-error, he chose to use single-origin Ghanaian chocolate for its red fruit tones, mixed with the highest quality confectionary chocolate. The resulting blends are so pure in flavor that they can actually enhance the flavors and nuances in the wine without overpowering them. Here’s a list of the wines each variety is designed to pair with best:

Extra Darkis ideal for pairing with Cabernet and Bordeaux

Medium Darkis perfect for pairing with Zinfandel, Merlot and Shiraz

Smooth Darkpairs wonderfully with Champagne, Riesling, Pinot Noir and Vintage Port

Milk Chocolateis a great match for Port, Sherry, Dessert Wines and Burgundy

The Brix Collection contains a 4 oz. brick of each of the four Brix varieties. All of the Brix blends should be fractured with a sharp-tipped knife and stored in a cool and odor-free environment in an airtight bag. To learn more about Brix Chocolate for Wine visit
