The genius food artisan who founded Brix is Dr. Nick Proia, an Ohio pulmonologist. The good doctor loved wine and even gathered with his colleagues as part of a wine tasting group. As much as he enjoyed drinking wine and eating the obligatory cheese pairings his colleagues presented, he was frustrated that these high-fat and high-cholesterol cheeses were essentially erasing any potential health benefits he enjoyed from the wine. Determined to find an alternative, Dr. Proia began sampling every chocolate he could get his hands on and pairing them with his favorite wines. Many were too sweet, too creamy and just too candy-like. On the other end of the spectrum, the dark chocolates with a high cocoa content completely overpowered the wine. So began the quest for a perfect wine accompaniment.
Like many of the food artisans Foodiacs has profiled, Dr. Proia began his tireless mission, recipe after recipe, to create just the perfect blends with the right profiles to pair with specific wine styles. After much trial-and-error, he chose to use single-origin Ghanaian chocolate for its red fruit tones, mixed with the highest quality confectionary chocolate. The resulting blends are so pure in flavor that they can actually enhance the flavors and nuances in the wine without overpowering them.
